DoMA’s highly anticipated bourbon is here! What makes our bourbon so special?

“This whiskey release is the culmination of 5 years of passion, dedication, and craftsmanship – a truly meticulous journey,” says Seth Watson, DoMA Founder and CEO. “I wanted to create a whiskey that showcases what a great American bourbon looks like, to me. Our team took the time and care to create a Bourbon Whiskey and Rye Whiskey that embodies the art of the spirit and brings people together through a new experience.”

DoMA’s bourbon and rye share the same grain sources, but in different proportions, each chosen for its unique contribution to flavor. We use non-GMO white corn in both whiskeys, which imparts a slightly sweeter taste than the standard #2 yellow dent corn. This corn also produces beneficial compounds that acidify during fermentation, creating flavorful esters as the whiskey matures.

For our rye, we’ve selected Wren’s Abruzzi Rye, an Italian varietal that thrives in the Southeast. Unlike most rye that is grown in the northeast and Canada, this locally grown grain offers a distinctive advantage: it has lower levels of furfural, giving the whiskey its characteristic spice, black pepper, and clove notes. By carefully selecting both the rye grain and yeast, we control the spice profile. DoMA rye has a lower spice level than most, favoring grassy, floral, and minty notes from the grain itself.

Our malted barley, sourced from Riverbend Malt in Asheville, NC, is chosen not just for its ability to convert starches into fermentable sugars, but for its contribution to flavors. We believe malt should add character, not just function. This is why DoMA chose to include a lower malt mash in our  bourbon and rye– so you can truly taste the purity of the grain in our spirits.

TASTING NOTES

DoMA Bourbon has a light amber appearance. It has aromas of candied dark fruit and a hint spearmint on the nose, with pleasing vanilla and caramel notes in the background. On the palate, DoMA’s Bourbon has lots of dried and stewed orchard fruits, with honey and dried flowers. The finish is medium dry, leaving the drinker craving another sip of this glorious bourbon.  

Light caramel in appearance, DoMA Rye starts with bolder aromas of leather, chocolate and, tobacco, along with subtler herbal aromas (from the Abruzzi Rye). The palate is generous, but firm, with dark and milk chocolate, coffee, cashews, and the quintessential Rye spiciness. The creamy, luxurious, texture make it a pleasure to drink. The finish is long and lingering with just a bit of heat. This is an exceptional Georgia rye whiskey.
